Per Serving (Approximate):

  • Calories: 330
  • Fat: 35 grams
  • Protein: 2 grams
  • Carbohydrates: 1 gram

Ingredients

  • 1 large egg, separated
  • 1/2 cup melted animal fat (e.g., butter, lard, duck fat, chicken fat, etc.)
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice or apple cider vinegar
  • 1/4 teaspoon sea salt1/3 cup (80 ml) finely grated Parmesan cheese

Directions

  • Separate the egg yolk and place it in a medium-sized bowl or a container suitable for an immersion blender or hand mixer.
  • Heat the animal fat in a microwave-safe container or saucepan until it’s fully melted and bubbly.
  • Add the mustard, lemon juice or apple cider vinegar, and salt to the egg yolk. Blend or whisk the mixture until it becomes light and frothy, which should take about 30 seconds.
  • Gradually pour the melted fat into the yolk mixture while continuously blending. Take your time during this step, allowing the fat to incorporate fully into the yolk. This process should take 5–6 minutes to achieve a smooth, creamy consistency.
  • Once the fat is fully blended, add the reserved egg white to the mixture and blend for about 10 seconds to combine.
  • The mixture will look more like a salad dressing at first but will thicken to a mayonnaise-like consistency after a couple of hours in the refrigerator.
  • Transfer to the fridge and store in an airtight container. Use as needed within 10 days.
