Per Serving (Approximate):

  • Calories: 282
  • Fat: 23 grams
  • Carbohydrates: 3 grams
  • Protein: 28 grams

Ingredients

  • 1-1/2 lbs ground beef (or a mix of ground beef and ground pork)
  • 1 cup pork rind crumbs
  • 1 large egg
  • 1/3 cup tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat your oven to 350°F.
  • In a large mixing bowl, combine the ground meat, pork rind crumbs, egg, tomato sauce, salt, pepper, parsley, Parmesan, onion, and garlic powder. Mix thoroughly until evenly combined.
  • Shape the mixture into an oval loaf and place it in a shallow baking dish.
  • Bake the meatloaf for about 1 hour or until it reaches an internal temperature of 160°F.
  • Once done, let the meatloaf rest for a few minutes before slicing.
  • Enjoy!
