Per Serving (Approximate):

  • Calories: 257
  • Fat: 23 grams
  • Carbohydrates: 2 grams
  • Protein: 16 grams

Ingredients

  • Crust
    • 1 ¼ cups pork rind crumbs
    • 1 ¼ cups freshly grated Parmesan or hard Gouda cheese
    • 1 large egg
  • Filling
    • 1/2 cup chicken or beef bone broth (use your preferred brand)
    • 1 cup grated Swiss or Muenster cheese
    • 4 ounces cream cheese, softened
    • 1 tablespoon melted butter
    • 1/2 cup diced ham
    • 4 large eggs, beaten
    • 1/2 teaspoon sea salt
  • Filling
    • 1/2 cup chicken or beef bone broth (use your preferred brand)
    • 1 cup grated Swiss or Muenster cheese
    • 4 ounces cream cheese, softened
    • 1 tablespoon melted butter
    • 1/2 cup diced ham
    • 4 large eggs, beaten
    • 1/2 teaspoon sea salt

Instructions

  • Preheat the oven – Set your oven to 325°F (165°C).
  • Prepare the crust – In a mixing bowl, combine pork rind crumbs and cheese, stirring until evenly distributed. Add the egg and mix until a stiff dough forms. If needed, add extra pork rind crumbs for consistency. Press the dough into a 9-inch pie dish to form the crust. Bake for 12 minutes, or until lightly browned.
  • Prepare the filling – In a medium bowl, combine the broth, grated Swiss cheese, melted butter, and softened cream cheese. Stir until smooth. Mix in the diced ham, beaten eggs, and salt.
  • Assemble the quiche – Pour the filling into the pre-baked crust.
  • Bake the quiche – Place the dish in the oven and bake for 15 minutes. Lower the oven temperature to 300°F (150°C) and continue baking for an additional 30 minutes, or until a knife inserted about an inch from the edge comes out clean. If the edges of the crust start to brown too quickly, cover them with foil.
  • Cool and serve – Let the quiche rest for 10 minutes before slicing into wedges.
  • Enjoy!
